full time <single> mother with full time job.  get home with kids around 1730hrs.  so, what are some of your quick and easy dinner dishes?  fav recepies? the least amount of pots/pans/dishes used the better.  thanks in advance.

Mac & Cheese mixed with a can or two of tuna or chicken or ground deer(beef for city folk)  Fifteen minutes tops.

Use ground turkey. Its cheaper than beef and not as greasy. Not to mention healthier.

thanks!  i've gotten ground turkey in the past, i never check prices i just ASSumed it would be more.  i'll pay attention next time.  i actually prefer turkey, i don't think it's a tastiful (is that a word??) but i like the healthiful (is that a word) idea :D

Honestly with somethings I think the turkey makes it taste better! Like chili, I won't make chili now with ground meat, it tastes SO much better with ground turkey....I make some wicked chili, yall would like it! ;)


That's a good meal idea though: chili or some sort of soup. Make a big pot of it on your day off and you can just freeze it and just heat it up when you need a quick meal!

Since I am by myself and the only leftovers I like is cold pizza, I tend to eat the cheapy .88 tv dinners. I get my veggies, potatoes and meat all in one. Oh yeah I get alot of sodium in those, so drink lots of water to counteract that lol

froogsey, i don't claim to speak English well, BUT, i do my best!!  that being said, i enjoy making fun and using the Utahnics i've heard in these here parts.  so, i use'm when i can as well as pronounce the words the way they look and not the way they're correctly pronounced.  it's fun.  and, i've learned some new words from my 4year old.


these are all good tips so far.  i forgot about tv dinners.  there are those kiddy ones with pizsa, tacos, ham and crackers, etc.  score!!

How about an easy crockpot receipe?    1 1/2 lbs. boneless/skinless chicken; 1 can cream of mushroom soup; 1 can cream of chicken soup; 8 oz. sour cream; 8 oz. salsa.  Crock pot it all through the day.  When you get home, layer the mix with flour tortillas and cheese (like making lasagna).  Bake at 400 degrees for 15 minutes.

thanks truckie, i'm while my kids are still eatting everything i give them (veggies and fruits) i'm trying to start ahead learning how to cook.  i'm horrible with food.  i also hate making a mess esp when *I* have to clean it up ... but, the crock thing sounds great since it appears it's one dirty dish :)

For a Quick-A-Liscous meaI really like to use the Zatarains they offer a wide variety of Cajun and Creole style meals most are one pot and Most Excellent Flavor http://www.zatarains.com/  I use them late at night or after a fire and usually you can add just hamburger or sausage, but you can really soup them up with seafood too.  Check it out!  My daughter really loves them.

Walking Tacos


they are the easiest tacos to make and clean up first u start of by getting small bags of cheese doritos or king size which is what i go for lol 2 u get enough ground beef for the dept mix it with beef taco seasonings cook as directed on package 3 shred lettuce and put it to the side along with olives, tomatoes, cheese in separet bowels and get sourcream now iits time to make them up crunch up the bags of doritos and fill them with the meat about 2 cups and just give one to each  person and they can help theirself filling the rest they can make the bagged taco the way they want and the eat it with a fork so great for on the go and no messes at first i thought they were weard until i tasted them and they're good make enough incase anyone wants extras

Baked/Grilled Chicken Breasts


Just grab a bag of the very inexpensive chicken breast from the local mart and place them (thawed or frozen) on a cookie sheet coated with cooking spray.  Take a shaker of the Season Salt (and any other seasoning: Lemon Pepper/Italian Seasoning/Oregano just experiment to fit your taste) and sprinkle each piece to your own liking (it is difficult to put on too much) and bake for 35-45 minutes at 350 degrees.  You can also grill them too.  A bag of salad and a vegetable or two and you have a full meal deal.  I even slice them and place them on top of a salad for a light quick meal too.  They can be prepared before hand and warmed up in a microwave during the week as needed.  Most Excellent with Salsa and Spanish Rice.

Chichen Breast and Rice




Just grab a bag of the very inexpensive chicken breast from the local mart and place one (thawed or frozen) on a piece of foil about 12 inches square or bigger.  Add a can of Cream of Chicken or Cream of Mushroom soup (already mixed with water so you actually have two cans of soup mix) and cover the chicken breast.  Refill the can with Minute Rice and pour over the breast and soup.  Roll up the foil tightly and place on cookie sheet.  Repeat with another chicken breast and remaining soup mix.  Bake at 350 for about 35 -45 minutes.  Serve with salad.  Can be prepared on a grill or even in a camp fire!

we use the bags of chicken breast and strips A LOT.  They are so convienant.  WE like to melt a stick of butter in the bottom of a skillet and place the chicken in with just lemon peper on it and cover it until it is fully cooked.  Divide up a bag of salad mix, cut up chicken into bite size pieces, add salad dressing and enjoy.  Fast, Easy, Fewer dishes, Healthier than burgers. 


Or we serve it with microwave baked potatoes.  So easy even the kids can do the cooking.  Scrub potatoes, poke a couple holes with a fork into the potatoes, place in microwave and heat for 8 minutes.  Check to see if they are easy to stick a fork in, if not turn them over and heat for another 4 minutes (depends on size of potatoes and quantity/)  By not boiling the potatoes you save time, dishes, and all the nutrients and minerals stay in the potatoe instead of going down the drain with the water or in the garbage with the skin. 


Frozen veggies have more of the good stuff in them too (better than canned anyway, but fresh are the best) and they microwave in a quarter the time it takes on the stove top.  When microwaves came out I had no use for them, but here lately I don't tink I'd like to not have it anymore.  It has become My Friend ;)
